Vitamin E, antioxidant extraordinaire!
The structure of alpha-tocopherol
Vitamin E is a group of 8 compounds that are all similar in structure, and primarily resemble ɑ-tocopherol. Vitamin E acts as an antioxidant, preventing harmful free radicals, which are lone, unpaired electrons that can cause dangerous chain reactions, from damaging cell membranes to destroying DNA.
Vitamin E deficiency is rare, but causes hemolytic anemia, where blood cells rupture due to being weakened from a lack of vitamin E. Tomatoes and spinach are excellent sources of vitamin E.
