Tomatoes are a red, savory fruit, typically classified as a vegetable for tax purposes. The fruit is entirely edible, and ranges in size from softball size to grape sized. Tomatoes are typically deep red in color, although heirloom varieties can have many hues, such as orange and yellow. Tomatoes are sweet and earthy, but store-bought tomatoes lack the depth of flavor that home-grown tomatoes due. This is because tomatoes are picked when green and gassed with ethylene to artificially ripen them. Although the color changes, the sugars and nutrients that develop from ripening on the vine are not present.
Tomatoes are an excellent source of Vitamin A.
