A jacuzzi for food!
An immersion circulator is a device which heats water to a specific temperature and circulates it through a cooking vessel. This device is used for cooking sous vide style, where food is sealed under a vacuum and placed in a water bath held at the final desired food temperature for an extended time. The benefit of this cooking method is that the food will always be perfectly done and requires no attention during the cooking process. Since it is done at relatively low temperatures, no browning occurs. The food is often quickly seared at high heat after the sous vide process.
If an immersion circulator is not in the cards, a similar effect can be achieved by filling a cooler with water around 10-15 degrees higher than the desired final temperature, and placing the food in the cooler for around an hour.
