Watch your fingers!
A mandolin is functionally a food guillotine. It creates thin, consistent slices of food, and is excellent for preparing a large quantity of thinly sliced vegetables. While by no means a necessity, it is an incredibly useful piece of equipment for making dishes that demand lots of thinly, evenly sliced vegetables, such as coleslaw, potato chips, scalloped potatoes, and french fries. Be careful when using the mandolin and always utilize the hand guard.
