Picking a knife

While many people, including myself, own a collection or set of knives, the reality is that you only need one really good knife. Your one knife should be medium sized (6-8 inches), weighty, and feel good in your hand. I recommend a solid Chef's knife. My preferred brand is Shun, but it is by no means the only quality brand available.
