Ingredients
1/2 cup plus 2 Tbsp Olive Oil
1 clove of garlic
1 tsp kosher salt plus more for seasoning
2 egg yolks
3-5 anchovies
1 tbsp lemon juice
1 tbsp dijon mustard
1 tsp worcestershire sauce
3-4 tablespoons finely grated parmesan cheese
Pepper to taste
Preparation
Mince garlic to a paste, using salt as abrasive
Mince anchovies until very fine or paste-like
Combine anchovy, garlic, mustard, lemon juice, and egg yolks
Whisk to combine
VERY SLOWLY drip in 2 tbsp of olive oil, whisking constantly
SLOWLY drizzle in remaining olive oil, whisking constantly
Add worcestershire and grated cheese
Season to taste with salt and pepper
