About the Recipe
Adjust salt and pepper to taste. Garden-ripe tomatoes will give an unmatched depth of flavor. The quality of olive oil used in the recipe will impact the final product.
Ingredients
1 quart Cherry tomatoes
Fresh Mozzarella
Loaf of bread (French bread/ciabatta preferable)
Fresh basil
Kalamata olives (optional)
2 tsp Salt
1 tsp Pepper
~1-3 tsp Olive Oil
Balsamic vinegar
Preparation
Preheat oven to 350
Slice bread about 1/2 inch thick, lay on baking sheet
Brush both sides of bread with olive oil
Bake bread for ~10 minutes, flipping halfway, or until bread is golden brown and crispy
Dice tomatoes
Roughly chop basil
Dice olives if using
Combine in bowl with olive oil, season to taste
Slice mozzarella
Assemble bruschetta; toast on bottom, then mozzarella, then tomato mixture, finish with drizzle of balsamic vinegar
