About the Recipe
This recipe is terribly simple, and really highlights the quality of tomato you use. If you have garden-ripe tomatoes, use those. Grape and Cherry tomatoes tend to be sweeter than other store-bought varieties, so I prefer using them if I don't have garden-ripe at hand. You can make you own Mozarella too. I usually let people add their own balsamic.
Ingredients
~ 2 pounds Tomatoes (Grape/Cherry preferable)
1 pound Mozzarella Cheese (whole, not grated/shredded)
Fresh Basil
~ 1/4 cup Olive Oil
Salt
Pepper
Balsamic Vinegar (Optional)
Preparation
Cut the tomatoes into bite-size pieces
Slice the mozzarella into bite-size pieces
Chiffonade the basil (or tear into small pieces)
Combine ingredients in a bowl with olive oil, toss to combine
Season to taste with salt and fresh cracked black pepper
(optional) Drizzle with balsamic vinegar
