About the Recipe
It's best to keep the seasoning minimal to emphasize the natural sweetness and flavor of the crab. If you want a dipping sauce, try combining a nice dijon mustard with mayonnaise in a 1:2 ratio.
Ingredients
1 lb lump crab meat
1/3 cup mayonnaise
1 tbsp mustard
1/2 c breadcrumbs (I used Ritz crackers)
1 egg
1 bundle chives (about 1/4 cup)
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Old Bay
1/2 tsp garlic paste
1/2 tsp ginger paste
juice of 1/2 lemon
Preparation
Combine crab meat, mayo, mustard, chives, and juice of lemon in a bowl, season to taste
Add egg and breadcrumbs, stirring to combine
Form crab mixture into patties
Melt butter in sauté pan over medium heat until bubbling
Cook patties for ~3 minutes or until golden brown, flip and cook other side until golden brown
