Play around with the seasonings to get the flavor you want. You can mix in all sorts of things into the filling, like pesto, hummus, and more!
Ingredients
8 Eggs
1/2 cup Mayonnaise
2 tbsp Mustard
Seasonings (especially paprika)
Horseradish (optional)
Garlic paste (optional)
Chives
Preparation
Boil eggs for exactly 9 minutes, then immediately place into ice bath
Peel eggs
Slice eggs in half lengthwise
Remove the yolk into a bowl, saving the whites for later
Add mayo, mustard, mash with fork until a smooth paste forms (optional, run through food mill/ricer/strainer for smoother texture)
Season to taste
Spoon or pipe yolk mixture back into whites
Dust LIGHTLY with paprika, sprinkle with chives
