These cookies have a little kick! This recipe is extremely versatile, so mix it up with the kinds of chocolate chips you use, the spices, or any other mix-ins, like nuts or dried fruits! If you leave the spices out altogether, you'll have a delicious, simple chocolate chip cookie recipe. Chilling the dough not only allows the flavors to meld, but makes the cookies spread slower during cooking, leading to thicker cookies.
Ingredients
1 cup butter
1 1/4 cups brown sugar (darker is better)
1/4 cup white sugar
1 egg
1 egg yolk
1 tsp vanilla extract
2 tbsp milk
1 1/4 cup bread flour
1 tsp salt
1 1/2 tsp baking soda
1-2 cups chocolate chips
1 tbsp cinnamon
1/2-1 tsp cayenne pepper
Preparation
Preheat oven to 325 F
Melt butter
Combine butter and sugar in mixing bowl
Add egg, egg yolk, milk, and vanilla extract, mix to combine
Sift together flour, salt, and baking soda
Incorporate dry mixture into wet batter
Add in chocolate chips, cinnamon, and cayenne
(Optional) Chill mixture in refrigerator for 1-24 hours
Cover a sheet pan with parchment paper
Scoop batter onto pan with spoons or ice cream scoop, leaving space for spreading
Bake for about 10-12 minutes, until golden brown on the edges and no longer glistening or shiny in the center
