About the Recipe
Latkes are a superior form of hash brown. If you're in a hurry, you can grate the potato into a large bowl of water to rinse off some of the starch, then dry thoroughly before combining with other ingredients.
Ingredients
4 Russet potatoes
1 large onion
2 eggs
1 tbsp baking powder
3 tbsp AP flour
Salt
Pepper
Preparation
Grate the potatoes and onion, wrap in a clean dish towel, set in a mesh strainer and weigh down to drain liquid for at least 30 minutes
Transfer potato and onion to a bowl, mix with other ingredients
Season with salt and pepper
Heat ~1/4 inch oil in skillet to medium-medium high
Form potato mixture into pucks, frying for around 6 minutes a side or until golden brown and delicious
Remove latkes to paper towel or wire rack, season with salt
Serve with sour cream and applesauce
