These lime bars are a perfect treat for anyone who likes a bit of tang. You can control the level of sweetness by adjusting the amount of juice you add. You can use any citrus juice in any combination. Try making lemon-lime bars, or orange grapefruit bars!
Ingredients
Pastry base:
2 cups AP flour
1 cup (2 sticks) unsalted butter
1/2 cup brown sugar
1/2 tsp salt
Citrus Mixture:
4 eggs
1 1/2 cup white sugar
1/4 cup AP flour
1-2 cups of lime juice
zest of 2 limes
Preparation
Preparing the pastry base:
Preheat oven to 350 F
Combine brown sugar with flour
Cut butter into small pieces
Combine butter with dry mixture with hands or pastry cutter until mixture resembles coarse crumbs
Spread mixture into cake pan lined with parchment paper or greased and floured
Press down mixture to form an even layer
Bake in oven until golden brown, about 20 minutes
Preparing the citrus mixture:
Crack eggs into a bowl
Add sugar and flour, whisk to combine
Add lime juice to taste
Stir to combine
Pour mixture over pastry base
Cook in oven until firmly set, about 20 minutes
Let cool, slice into squares and dust with powdered sugar
