About the Recipe
The longer you cook the sauce, the sweeter and richer the flavor will get. Be sure to scrape the bottom occasionally, as some solids tend to sediment and can burn.
Ingredients
2 cans whole canned tomatoes
1/2 cup tomato paste
1 yellow or sweet onion
3-4 cloves of garlic
Herbs such as basil, rosemary, thyme, and oregano
1/4 cup high-proof spirit such as vodka or gin
Salt
Pepper
Preparation
Roughly chop the onion and garlic
Sauté the onions and garlic until fragrant
Add tomato paste and cook for 4-6 minutes or until darkened in color
Deglaze with high-proof spirit
Add whole canned tomatoes
Puree with immersion blender (alternatively, puree in blender/food processor in batches and return to pot)
Add bouquet garni of fresh herbs or 1-2 tsp of dried herbs if using
Bring to simmer and cook for 40-45 minutes or until desired thickness is achieved, stirring occasionally
Season to taste with salt, pepper, and sweeten with sugar or equivalent if desired
