About the Recipe
If you are grinding your own meat, cube it and put it in the freezer for 15-20 minutes before grinding. Smaller meatballs will cook faster, you can freeze the meatballs for later use. Play around with the beef:pork ratio to find the consistency you like best.
Ingredients
1 lb beef
1 lb pork
2 eggs
1/2 bread crumbs
1/4 cup parmesan cheese
1 tsp rosemary
1 tsp thyme
1 tsp oregano
2 cloves garlic
1 tbsp salt
1 tsp black pepper
Preparation
Grind meat if necessary
Mince garlic and herbs
Combine all ingredients until homogenous
Roll into desired size meatballs
Sear meatballs on all sides in pan over medium high heat
Poach seared meatballs in marinara sauce for about 20 minutes
OR
Finish meatballs in oven (350 F for about 30 minutes)
